Every once in a while its time to indulge. Ghee rice is one such recipe, a recipe that calls for plenty of ghee or clarified butter. This rice is perfect for a Sunday, where it can be served with any special korma dish on the side. Serve with Vegetable Korma or Egg Curry or even a non-vegetarian chicken dish. This is also perfect for those Indian parties when you have plenty of spicy sides.
You will need:
2 cups Rice - I usually use Basmati Rice for this recipe. But you can use Sona Masoori also.
3 Green chillies - Slit lengthwise
1/2 cup Whole Cashew
1/4 cup Raisins
Chopped Cilantro - About 1 tbsp
4 tsp Garam Masala Powder (You can use homemade or any store bought brand)
Salt to taste
4 to 5 tbsp Ghee or Clarified Butter
For Seasoning: 1 tsp Cumin seeds and 1/2 tsp Mustard seeds (optional)
Method:
1. Cook the rice in a rice cooker or on stove top until done. I use the ratio 1 cup rice to 1.5 cup water for Basmati Rice (or 2.5 cups water for Sona Masoori Rice).
2. When the rice is done, spread on a large platter or mixing bowl and cool.
3. To this warm rice, add the salt, garam masala powder.
4. In a pan, warm the ghee. Add the cumin seeds and mustard seeds. After about 1 minute add the cashew and the raisins and saute until golden brown. Then add the chopped chillies and chopped cilantro, saute for a minute and add to the rice.
5. Mix everything thorougly but gently until well blended.
6. Serve hot with korma.

ghee adds a very beautiful flavor to rice indeed! I use it in all my pulao recipes..the bowl looks inviting girl
