Pantry Pasta

It must be in the genes, because both my daughters are turning out to be wonderful cooks themselves. My older one is more Global in her taste – she is always trying new recipes of Pastas, Parfaits, Salads etc. And my younger one is a lot more Indian in her taste – she likes her Dosas and her Rotis πŸ™‚

Today’s recipe from my kitchen is a Pantry style Pasta that my daughter put together to satisfy cravings of hunger for comfort food. She whipped together this pasta in a matter of minutes with ingredients available in my refrigerator and pantry. I was pretty amazed πŸ™‚ Hence the name…

You will need:

2 cups of Pasta (any style, she used Penne).
2 cups Mixed Vegetables – Broccoli, Mushrooms, Artichoke Hearts, Olives, Peppers or Capsicum (Red, Yellow, Orange), Spinach, Asparagus – Really it is upto you as to what you want to add, she added a little of all of the above
Olive Oil
1 Large Garlic- Peel and Chop
Salt to taste
Pepper Powder
Italian Seasoning if you have handy (or you can use dried oregano, parsley or any herb seasoning that you have available)

For the Creamy Sauce:
2 tbsp Cream cheese
1 tbsp Fresh cream
2 tsp Mayonaise
1 small finely chopped onion
2 tbsp Red chilli sauce or Sriracha Red Chilli Sauce
2 tbsp grated Parmesan
Salt and pepper to taste

Combine all of the above in a bowl and mix well. If the mixture is too thick add some milk to get the mixture to a creamy consistency. If you dont like too much cream you can omit the fresh cream and replace with milk instead.

In a large pot or saucepan, boil plenty of water. When the water is boiling add the dry pasta in there and cook the pasta until al dente (fully cooked but firm).
Drain the pasta and keep aside.
Chop the mushrooms, olives, artichoke hearts, peppers and asparagus into slices. Break the broccoli into florets. If you have small baby spinach you can leave the leaves as they are, if not roughly tear them up. Keep the veggies aside.
In a large skillet, heat the olive oil. Add the chopped garlic and chopped veggies and stir fry on high heat for a few minutes. The veggies will generally emit some water, stir fry until dry. Add the salt and pepper. Combine the creamy sauce mixed above. Add the italian seasoning and mix well. Afetr about 3 minutes add the cooked and drained pasta and mix well. Adjust salt, pepper and red chilli sauce according to taste. Serve hot garnished with grated parmesan.
